Today, according to the producer standard prepared by the Ministry of Agriculture and Food: "the name 'ayran' is used for a liquid milk product that has undergone lactic acid fermentation, with an addition of water below 50% and with added salt and a salt content of about 0.8 %.' The basic recipe is from: yogurt and water in a 1:1 ratio and salt to taste. The drink is served cold and is suitable for hot summer days as well as for people with low blood pressure. According to the production technology in milk processing plants, ayran is prepared from skimmed cow's milk with a fat content of 0.1% and an acidity of 19°T.
